California Oat Waffles

Ingredients for two to three round waffles with 8-inch diameter

  • 1/3 cup Aunt Jemima Complete Buttermilk Pancake & Waffle Mix
  • 1/3 cup rolled oats
  • 2 tablespoons golden flaxseed meal
  • 2 tablespoons chopped pecans (small natives are better than blubberly hybrids)
  • Spray-oil
  • Berries (blueberries, blackberries, raspberries, strawberries, or a combination)
  • Maple syrup

  1. Measure pancake mix, oats, and pecans into mixing bowl
  2. Measure flax seeds into coffee grinder, grind into meal, and put in mixing bowl
  3. Add about 1/2 cup water, or maybe a little more, to mixing bowl
  4. Stir batter, and put it  aside for a couple minutes
  5. Heat waffle iron
  6. Add water to batter to bring it to proper consistency
  7. Spray oil on cooking surfaces
  8. Pour batter on hot waffle iron, and close waffle iron to cook
  9. Remove waffle when golden brown, and plate it
  10. Add berries and/or syrup to taste
